Ingredients

Tatar of Char with Avocado

2 char filets, fresh and boned
2 avocados
2 tbsp. sour cream
1 tbsp. chives, chopped
salt
freshly ground white pepper
a pinch of sugar
lemon juice
a few drops of Tabasco sauce
lemon balm to garnish

Preparation

Cut the avocados in half, remove the stone and scoop out the flesh with a teaspoon. Mash this with a fork and add lemon juice immediately. Mix this with sour cream, chives and a pinch of sugar. Season to a savoury taste with salt, pepper and a dash of Tabasco sauce. Chop the char filets finely and mix these in with the avocado cream. Scoop balls of the cream out with a spoon and arrange on a plate. Garnish with lemon balm.

Tip:

If the Tatar of char is not being served as a breakfast but rather as a small starter, fried filet of char strips can be served along as a tasty accompaniment.
